I know we’re all busy in the mornings but it is so important to have a good breakfast before heading out for work, going to the gym, or taking care of errands. This is a super easy protein pancake recipe that will give you the energy you need, to start your day. Plus, it’s super delicious and healthy! How cool is that?!
Ingredients for 4-5 pancakes:
¼ cup Soy Flour
¼ cup Chickpea Flour
½ teaspoon Baking Powder
1 scoop chocolate protein powder (or to taste)
¼ cup mixed berries
½ cup of water
Put flour, baking powder, and protein powder in a bowl. Slowly add water while stirring until smooth and creamy. Add more water if needed. If you prefer a sweeter taste, add some sweetener like Truvia.
Preheat skillet on medium high heat. Cover lightly with cooking spray. Add 2-3 spoons of pancake batter and cook until the surface has a few bubbles. Flip pancake carefully with a thin spatula. 1-2 minutes per side.
Place pancakes on a plate and serve with mixed berries and agave nectar (optional).
Tip: If you don’t feel like cooking in the morning, you can make the pancakes at night and heat them up in the microwave the next morning.
