Avocado – Chik’n Salad

Those of you who know me also know that I am very lazy when it comes to cooking. It’s simply not one of my favorite things to do. Therefore I usually prepare very simple dishes, that are easy (and fast) to make. The trick here is to somehow make them delicious too! Like this Avocado – Chik’n Salad.

Avocado Chikn Salad



For this salad you will need:

Ingredients Avocado Chickn Salad

Two handful of mixed lettuce (I usually buy an organic, prepackaged mix of romaine, spinach, green and red chard, and oakleaf lettuce)

1 Tomato

¼ Cucumber

½ Small Onion

½ Avocado


Boca Burger1 Boca Chik’n Burger








I made a very simple dressing with:

2 T Olive Oil

1 T Balsamic Vinegar

Juice of ½ Lime

Salt and Pepper to taste


For non-vegans or those who don’t like Boca Burgers, you can substitute with chicken breast, tofu, veggie burgers. Choose a protein source you really like!
